Sultry Summer Squash

A wonderfully simple and delicious dish.  Great for those summer evenings on the patio with a good book.

Ingredients:


1 Fresh squash
2 Cloves of fresh garlic, minced
Sea salt
Freshly Ground Pepper
Parmesan cheese, greated
Splash of balsamic vinegar
Olive oil

Heat the oil in a large non stick frying pan and add the garlic.  While they heat up and infuse, slice the squash into 1/4 inch rounds.  When the oil and garlic mixture have reached temperature place the squash slices in the pan.  Make sure that all pieces have contact with some of the garlic.

Once you see the squash slices starting to turn translucent, flip them over and sprinkle them with the and pepper.  As they change color even further flip them once more, adding another sprinkle of salt and pepper if desired.

When the slices have become translucent and started to droop slightly when lifted, transfer them to a plate.  Sprinkle on the grated parmesan and drizzle over a splash of good Balsamic vinegar.

Et voila!
